Enthusiastic, culturally rich with culinary skills acquired and developed alongside famous Michelin starred Chefs from Monaco, Casablanca to Mumbai, this lover of travel has designed a new lighter, healthier and tastier fusion menu, based on Mediterranean and oriental recipes.

He then managed all the kitchens of the Royal Mansour Marrakech, thus acquiring an acute knowledge of the desires of a demanding international clientele.Once returning to Monaco, he became passionate about creating seafood and Mediterranean fish dishes.

In the heart of the Maya Jah, we have created a unique counter for the presentation & preparation of fresh seafood products, a counter where the Chef creates his new lighter, healthy and richly flavoured recipes.
